One of the most prestigious blue cheeses in the world. It won the Gold Lactium in 2009 and the Gold Medal at the 2011 World Cheese Awards for the best blue cheese. Slow maturing (between two and three months), with a delicate and fragile rind. Inside, it is slightly white, with pale ivory tone with blue veins running through it that transport us to humid landscapes. Creaminess and elegance on the palate with tastes of butter and a slight spicy, salty point. Cheese to remember, share and eat again and again.
