Matured Sheep Cheese. Bocí
Artisanally made aged sheep cheese made from sheep’s milk. Thanks to a slow aging process of over two months, this cheese achieves a compact and firm texture. The quality of the milk used makes this cheese release an intense aroma of fresh milk when cut that transfers to each bite. The aged sheep cheese Bocí has a penetrating and clean milk flavor with clear hints of toasted nuts. In the mouth it is crumbly and creamy, with a slightly spicy and salty taste.
Aging time: At least 2 months
Conservation: Between 4ºC and 6ºC
Format: Whole cheese of 1.000 gr. approx. and a piece of 250 gr.
Ingredients: Pasteurised sheep’s milk, rennet, lactic ferments, and salt.
